Make Your Own Cinnamon Syrup for Pancakes & Waffles
A simple homemade Ceylon cinnamon syrup for pancakes, waffles, coffee and cocktails. Four ingredients, one saucepan, about an hour of steeping.
Warm, comforting cinnamon syrup, perfect over pancakes and waffles, stirred into coffee, or shaken into a cocktail. Here’s how to make it at home. 👨🍳
Ingredients
- 1 cup water
- 1 cup white or raw granulated sugar
- 4 Ceylon cinnamon sticks
- ½ teaspoon pure vanilla extract (optional)
Steps
- Gather your water, sugar, cinnamon sticks, and vanilla (if using).
- Boil and dissolve, in a small saucepan, bring the water to a boil and stir in the sugar until it completely dissolves.
- Add cinnamon, reduce the heat, add the 4 cinnamon sticks, cover, and let it simmer for about 5 minutes.
- Steep and infuse, remove from the heat. Keep it covered and let the syrup cool and steep for at least 1 hour (for more flavour, up to 6–12 hours).
- Remove the sticks, take out the cinnamon sticks. For extra depth, stir in the ½ teaspoon of vanilla.
- Bottle and store, transfer to a bottle with a tight seal and refrigerate.
💡 Tips: Store the syrup in the refrigerator. Use three to four sticks for a strong cinnamon flavour, break them into large pieces to increase contact and steep longer for maximum flavour.
What kind of cinnamon is best?
We recommend Ceylon cinnamon, it has a sweeter, rounder taste compared to Cassia, which is stronger and borders on bitter.
